To grind sugarcane, a mule was hitched to the long shaft that turned the rollers as the muled walked around. The cane was fed through the rollers and the juice from the pressed stalks was collected in a barrel. Virtually every farmer had a patch of sugarcane in the 1800s which provided syrup, brown sugar, and rock candy.

The Simmons family settled on Taylor Creek near Fort Christmas in the early 1870s. George Washington Simmons and Ann McDougald Simmons were married at Silver Springs in 1856. They soon moved to the Orlando area where they resided for a number of years. In 1873, they settled at Taylor Creek, near Fort Christmas, on what was known as the Henry Hodges improvement. This one-room house represents the simplest of structures, which was added to throughout the years by connecting additional rooms with covered porches or breezeways.
